摘  要:对北方稻区国家水稻(Oryza sativa L.)区域试验品种的品质进行检测与分析,结果表明,中早粳中熟组的各项品质表现最佳,其次为早粳晚熟组和早粳中熟组。在优质稻品质评判指标上,糙米率和直链淀粉含量表现最佳,透明度、碱消值及整精米率表现较好,胶稠度表现一般,垩白度在多数试验组的表现均欠佳,垩白度成为制约北方稻区稻米品质优质率的关键限制因素。Through testing and analyzing the quality of national rice(Oryza sativa L.)regional trial varieties in north rice area,the results showed that the quality of mid-early japonica mid-maturing group was the best,followed by early japonica late-maturing group and early japonica mid-maturing group.In terms of quality evaluation indicators of high-quality rice,brown rice rate and amylose content performed best,transparency,alkali spreading value and head rice rate performed better,gel consistency performed generally,and chalkiness performed poorly in most experimental groups.Chalkiness has become a key limiting factor restricting the high quality rate of rice quality in northern rice areas.
