摘  要:烟叶化学成分是烟叶吸食品质的基础,探讨烟叶化学成分与吸食品质的关系对确立中国烤烟特色风格的理化特征指标具有重要意义。在国内学者研究文献的基础上,归纳了烤烟烟叶常规化学成分与烟叶吸食品质的关系,分析了各常规化学成分对烟叶吸食品质的重要性,认为与吸食品质关系较密切的常规化学成分主要是糖组分和含氮化合物,保持适当的糖组分含量及糖碱比、控制烟叶的含氮化合物含量有利于改善烟叶的吸食品质、提高特色风格的彰显程度。The chemical composition of tobacco leaf is the basis of tobacco smoking quality.It is of great significance to explore the relationship between chemical components and smoking quality of flue-cured tobacco to establish the physical and chemical characteristics of Chinese flue-cured tobacco.Based on the research literature of domestic scholars,this paper summarized the relationship between conventional chemical components and smoking quality of flue-cured tobacco leaves,analyzed the importance of conventional chemical components to smoking quality of flue-cured tobacco.It was considered that sugar components and nitrogen-containing compounds were the main chemical components closely related to smoking quality.Keeping proper sugar content and ratio of sugar to alkali and controlling the content of nitrogen compounds in tobacco leaves are conducive to improving the smoking quality of tobacco leaves and enhancing the highlight degree of characteristic style.
