摘　　要：分别介绍了苦瓜中的三种活性物质——苦瓜多糖、苦瓜皂甙和苦瓜蛋白的结构、理化性质以及功效。结合目前提取技术的发展状况,着重讨论了这三种活性物质的提取以及精制方法,并预测了苦瓜活性物质在降血糖方面具有良好的应用前景。The structures,physical and chemical properties,and functions of the three active substances ' saponin,polysaccharide and albumen',which are extracted from Momordica charantia,were reviewed in this paper.Based on the development of extraction technology,the extraction method and the purification technology in extraction of the active compounds from Momordica charantia were discussed.Hopefully,Momordica charantia will have potential application in the treatment of hypoglycemic area.
