摘  要:蔬菜通常是指凡是能够以柔嫩多汁的产品器官供人类食用的一、二年生以及多年生草本植物 ,野菜则是指未经栽培而生长在自然条件下的可提供食用器官的野生植物。也有“森林蔬菜”或“山林蔬菜”之说 ,即包括某些森林植物的根、茎、果、花和菌类。开发利用野生菜不仅可以发展“绿色食品” ,提高人们的生活水平 ,而且有利于合理利用并保护资源 ,对调整农业产业结构、发展农村经济。Vegetables are the annual or perennial herbs that can provide tender and juicy product organs for people. Wild vegetables are the wild plants that are not grown by people, but grow in the natural environments and provide some edible organs for people. They are also called as 'forest vegetables 'or' mountain and forest vegetables', so their edible organs include the root, stem, fruit and flowers of some forest plants and mushroom. The exploitation and utilization of wild vegetables is not only good for developing the 'green food' and raising the life level of people, but also good for using the natural resources rationally, adjustion the industry structure of agriculture, developing rural economy and increasing the rarmer's income.
