摘　　要：简述了大豆蛋白质纤维的成形过程,并对该种纤维分子结构进行了分析,同时,采用JSM 5600型扫描电子显微镜对其形态结构进行了观察。The forming of the soybean protein fibre is discussed briefly, and the molecular structure of the soybean protein is analyzed as well. The morphological structure of the soybean protein fibre has been examined under a scanning electron microscope JSM-5600.
