摘 要:目的 :比较研究 3种不同工艺生产水溶性珍珠粉。方法 :采用乳酸水解、酸 -酶水解、酶 -酸水解 3种方法制备水溶性珍珠粉 ,进行比较 ,检测其含氮量。结果 :酶 -酸水解法工艺流程短、成本低、有效成分损失少 ,含氮量显著高于乳酸水解法与酸 -酶水解法。结论 :酶 -酸水解法对珍珠硬蛋白的水解相当完全 。Objective: To make a comparative study on three different ways for producing water-soluble pearl power. Method: To adopt three ways, such as lactic acid hydrolyze, acid-enzyme hydrolyze, enzyme-acid hydrolyze, for preparing water-soluble pearl power; After that, to compare and examine their content of nitrogen. Result: The enzyme-acid hydrolyze's process was short, its cost was low and less effective component was lost little too; Furthermore, its content of nitrogen was higher than that with the ways of lactic acid hydrolyze and acid-enzyme hydrolyze. Conclusion: The ways of enzyme-acid hydrolyze's water-soluble was quite complete to pearl hard keratic, so its technics was worth spreading.
