Objective To investigate the effects of essential fatty acids (EFA) on the excitatory amino acid in tissues of rat brains. Methods Ninety neonatal rats, one-month old, were randomly divided into normal, EFA deficiency and fish oil supplementation groups and were fed with different forages for three months, respectively. The contents of aspartic acid and glutamic acid in the cortex and hippocampus were determined. The changes of morphology and structure of the cortex and hippocampus were observed by Nissl and silver staining. Results Compared with those in the normal group, the EAA contents in EFA deficiency group were significantly increased (P<0.05), but in fish oil supplementation group, no significant changes were observed. The number of large pyramidal cells in the cortex was much less than that in the fish oil supplementation group. At the same time, the length of axons was shorter in deficiency group. In the hippocampus, the layer and the size of cells were less than those in the fish oil supplementation groups. Conclusion Deficiency of EFA at the developmental period can increase the EAA contents in brain and cause abnormality of neural morphology.
