摘  要:在盆栽试验条件下,以典型的旱稻品种中旱3号和巴西陆稻为材料,研究移栽后土壤水分对旱稻米质性状和快速黏度速测仪(RVA)谱特征参数的影响。结果表明:与浅水层(0kPa)处理相比,低限土水势-20kPa处理的出糙率、精米率、粒长/粒宽、整精米率、蛋白质含量和崩解值增加或显著增加,垩白粒率、垩白度、直链淀粉含量、峰值黏度和消减值降低或显著降低,巴西陆稻胶稠度显著变短,中旱3号胶稠度显著变长;与低限土水势-40kPa处理相比,低限土水势-20kPa处理的精米率、粒长/粒宽比和崩解值增加或显著增加,垩白粒率、消减值和胶稠度显著降低或缩短,垩白度反应略有差异,其他米质指标没有显著差异。在适度水分胁迫下,旱稻的加工品质、外观品质和蒸煮营养品质明显改善。With upland rice of Baxiludao and Zhonghan 3 as materials, an experiment in pot was carried out to study the effects of soil moisture on the quality characters and rapid viscosity analyzer (RVA) profile parameters of rice. The results were as follow: comparing with the well-watered (0 kPa) treatment, while soil water potential (SWP) was (-20 kPa,) brown rice, milled rice, the ratio of kernel length to kernel width, head milled rice, protein content and breakdown values increased or significantly increased, and the percentage of chalky kernel, chalkiness and amylase content, peak viscosity and setback decreased or significantly decreased, gel consistency of Baxiludao was shorter, whereas that of Zhanghan 3 was longer; Comparing with -40 kPa treatment, while SWP was -20 kPa, milled rice, the ratio of kernel length to kernel width and breakdown values increased or significantly increased, the percentage of chalky kernel, setback and gel consistency, chalkiness had different response to soil moisture, and no significant differences were observed in other rice quality indices. The results suggest that the moderate water stress (low-limit water potential was (-20 kPa)) can improve milled quality, appearance quality, cooked quality and nutritional quality of upland rice.
