摘  要:以苹果新品种'粉红女士'为试材,研究了低温冷藏与室温贮藏中果实的乙烯释放速率、内源乙烯浓度及果实品质变化.结果表明,0~2℃冷藏显著抑制了果实乙烯释放,室温贮藏乙烯最高峰值是0~2℃冷藏的1.6倍.冷藏可显著降低粉红女士果实内源乙烯浓度,高峰值仅为室温贮藏的51.7%.0~2℃冷藏90 d后,粉红女士苹果较新鲜,较室温贮藏果肉硬度高12.5%,总酸高0.2%,出汁率高1.51%.在整个贮藏期,果实可溶性固形物含量变化不大,可滴定酸含量下降较快.Ethylene production, internal ethene concentration and fruit quality of ‘Pink Lady’ apples during room temperature and cold storage(0~2℃) were studied. The results showed that the ethylene production was inhibited significantly at cold storage, ethene peak value at room temperature storage is 1.6 times more than that of cold storage. The internal ethene concentration of fruit was cut down markedly at cold storage, its peak value was 51.7% of room temperature storage. After storage 90d at cold storage, the fruit was fresh, fruit firmness was 12.5% higher, acids 0.2% higher, juice rate 1.51% higher than the room temperature. During the storage, the soluble solids did not change significantly ,the acids debased rapidly.
