摘  要:目的 用铬天青S(CAS)分光光度法测定各种铝制炊具的铝溶出情况。方法 模拟日常生活不同烹饪条件 ,以自来水、4 %乙酸、3%氯化钠为介质 ,测定不同溶出时间及加热温度时的铝溶出量。结果 在酸性介质或盐性介质中铝溶出量远大于自来水 ,而且铝溶出量随使用温度的升高和时间的延长而增加。结论 铝制炊具的铝溶出不可忽视 。Objective To investigate the situation of aluminum(Al) dissolved from cooking utensils made of aluminum. Methods Various daily food cooking conditions were simulated and the quantity of Al was determined by Chrome Azurol S spectrohotometry. Results The results showed that different quantities of Al were dissolved during all kinds of treatments. The quantity of Al in 4% acetic acid(HAc) or in 3% salt(NaCl) were more than that in water, and Al was increased with increasing cooking temperature and storage time. Conclusion The amount of Al dissolved from utensils made of Al should not be neglected. This kind of utensils should not be used or be used as little as possible.
