摘　　要：酪蛋白是乳中最重要的成分。酪蛋白是乳源活性肽的重要来源,乳源生物活性肽是酪蛋白在消化酶作用下释放的,能被机体直接吸收,具有多种生物学功能。其中β酪啡肽(βcasomorphin,βCM)是最重要的乳源生物活性肽之一。该文就β酪啡肽的生理功能及其作用进行综述,并介绍了国内外β酪啡肽研究的情况及最新进展。Caseins are the most importent components in milk.Bioactive peptides derived from caseins are released from an enzymatic digest of casein.They could be directly absorbed by organism and have many physiological functions.β-casomorphin from casein is one of the most important bioactive peptides.The paper introduces physiological functions of β-casomorphin and its frend of research.
