摘 要:利用两步法合成了乙酰化羟化磷脂,较佳的反应条件为:磷酯5g,正己烷100mL,乙酸酐/磷酯(质量 比)=3.5%,30%H2O2/磷酯(质量比)=11.6%,反应温度60~70℃,总反应时间1.5h。通过测定乙酰化 羟化磷脂的碘值确定了其羟化度为15.8%;利用红外光谱分析法确定了改性磷脂的结构。对磷脂及改性磷 脂的乳化性及分散性进行了测定,结果表明:乙酰化羟化磷脂的分散性显著提高;在W/O型乳状液中,乙酰 化羟化磷脂的乳化性较好,在O/W型乳状液中,乙酰化磷脂的乳化性较好。Acetylated-hydroxylated phosphatide was prepared by acetylation and hydroxylation via two step reaction, the optimum reaction conditions were as follows: m(phosphatide) 5 g, V(n-hexane) 100 mL, acetic anhydride/phosphatide(mass ratio) 3.5%, 30% hydrogen peroxide/phosphatide(mass ratio) 11.6%, reaction temperature 6070 ℃, total reaction time 1.5 h. The hydroxylation degree of the product was measued by iodomaetry, and the structure of the product was analyzed by IR spectrophotometry. The dispersivity and emulsifying ability of the product were measured by dispertion and emulsification tests. The results showed that the dispersivity of acetylated-hydroxylated phosphatide is significantly improved. In W/O emulsion, the emulsifying ability of the acetylated-hydroxylated phosphatide is better, and in O/W emulsion, that of the merely acetylated phosphatide is better.
