摘　　要：介绍了壳聚糖的研究现状、结构性能和应用机理；指出壳聚糖研究的重点是开发应用研究，其化学修饰的研究是应用研究的方向．A review of the structures,the functions and the applications of the biological polyose chitosan has been made.The chemical embellishment of chitosan,which makes it have the good application prospects,is emphasized.
