摘　　要：蔬菜中的硝酸盐是一种对人体有害的化学物质,人体摄入它会引起多种疾病,对近年来国内外有关施肥及环境因素对蔬菜硝酸盐积累的影响进行了综述。Nitrate in vegetable is one of harmful chemicals to people＇s health. This paper dealt with fertilization and environmental factors on nitrate accumulation in edible portion of vegetable. Further researches and strategies of nitrate management to reduce nitrate content in vegetables were also reviewed.
