摘 要:采用在基质中复合添加ZnSO4·7H2O的方法,研究了增施锌肥对基质培甜瓜(CucumismeloL.)果实内物质积累及品质的影响。结果表明,在正常营养液管理条件下,锌肥增施对甜瓜果实内糖分累积、蔗糖酶和磷酸化酶活性、产量等的影响不显著,但仍对果实品质有改善效果;锌肥增施提高了果实中甜味和鲜味氨基酸含量而降低了苦味氨基酸含量,果实风味改善。增施锌肥还使甜瓜果实中的锌元素含量提高17.1%,而硝酸盐和亚硝酸盐含量分别降低了6.4%和10.2%,果实品质提高。Effects of zinc enrichment on dynamic substance accumulation during fruit development and ripeness as well as fruit quality of muskmelon (Cucumis melo L.) was studied by adding and compounding zinc sulfate (ZnSO4·7H2O) into substrate. The results indicated that the effects of zinc enrichment on sugar accumulation, activity of invertase and phosporylase and yield weir. not obvious under normal solotion management couditions, however, the fruit flavor was still enhanced, the content of sweet and delicious taste amino acid increased and the bitter ones reduced. Zinc enrichment also improved melon fruit quality, the content of zinc increased 17.1% compared to CK, whereas the content of nitrate and nitrite reduced 6.4 % and 10.2 % respectively.
