摘 要:随着社会发展与人们生活水平的不断提高,人们对畜产品的质量与安全越来越重视。动物营养学的研究热点也逐渐转向研究如何通过营养调控的手段改善和提高畜产品质量与畜产品安全。文章介绍了与畜产品质量及安全相关的指标,如嫩度、系水力等。着重阐述了营养因素、饲养方式(限饲)和环境应激等因素对畜产品质量与安全的影响。最后阐述了如何通过营养调控手段改善畜产品质量与安全,以期为进一步深入开展肉质的营养调控研究提供参考。As the society and people's Irving quality have developed recently,people became more and more concerned with the quality and safety of animal products such as meat, milk and egg and so on. Animal nutritionists also shifted their research interests to hot topic such as how to improve animal products' quality and safety. Here the paper introduced parameters related to the quality and safety of animal products, such as tenderness, water-holding capacity and so on. The paper analyzed the effects of factors, such as nutrient concentrates, feeding modes (nutrition restriction) and ambient stress and so on, on the quality and safety of animal products. Finally, the paper introduced how to change the quality and safety of animal products by nutritional regulations in hope of providing reference for further research in the quality and safety of animal products.
