摘  要:目的探讨不同酯化程度的脂溶性茶多酚抗氧化和抗脂质过氧化研究及质控指标。方法利用化学发光法测定脂溶性茶多酚(LTP)的氧自由基抑制率和过氧化脂质(LPO)抑制率,用rancimat油脂氧化稳定仪测定诱导时间,并考察其与总酯化物和总多酚的相关性。结果总酯化物及总多酚含量可以作为判别LTP性能优劣的指标。通过优化方法筛选制备的LTP,其总多酚和总酯化物含量分别为50.52%和50.2%。结论该产品在25℃下利用化学发光法测定的抗脂质过氧化性能优于等质量的TBHQ。Aim Study activity of lipid tea polyphenols(LTP) in different esterification degree on antioxidation and anti-lipid peroxidation. Methods The antioxidation and anti - lipid peroxidation of the LTP were investigated by chemiluminescence and the induction time was determined by Rancimat instrument of determination of oxidation stability and inspects them with the total esterification and the total polyphenol relevance. Results We had combined LTP with optimal method, their content of the total polyphenols and total esters are 50.52% and 50.2% respectively. The quality of the LTP may be coordinately controlled by total esters and the total polyphenols within a sacle. Conclusion The effect of anti-lipid peroxidation of the LTP that was determined by chemiluminescence at 25℃ is superior to TBHQ.
