摘 要:在相同条件下将番鸭、樱桃谷鸭和番樱半番鸭饲养至10周龄,测定3种鸭屠宰性能、胸肌营养成分和常规肉品质。结果表明:各周龄樱桃谷鸭、半番鸭体重显著高于番鸭,10周龄半番鸭、樱桃谷鸭和番鸭体重分别为2446.4、3496.5和3440.0 g;10周龄樱桃谷鸭屠宰率、半净膛率显著高于半番鸭和番鸭,其瘦肉率最高,半番鸭次之,番鸭最低;樱桃谷鸭和番鸭皮脂率显著高于半番鸭,番鸭腹脂率显著高于樱桃谷鸭和半番鸭;半番鸭胸肌蛋白质含量显著高于番鸭和樱桃谷鸭,樱桃谷鸭胸肌脂肪含量高于番鸭和半番鸭,半番鸭胸肌水分含量显著低于番鸭和樱桃谷鸭,番鸭胸肌剪切力显著高于樱桃谷鸭和半番鸭。The Muscovy duck (MD), Cherry Valley duck (CVD) and their crossing mule duck were fed under the same raising condition for 10 weeks, the eareass traits, breastmuscle nutrients and meat characteristics of three breeds were measured at the age of 10 weeks. The results showed that the body weight of CVD and mule duck was significantly higher than that of MD at each weekend, the 10-week-old body weight of CVD, MD and mule duck was 2 446.4, 3 496.5 and 3 440. 0 g respectively. The dressing percentage and semi-eviscerated yield percentage of CVD were significantly higher than that of MD and mule duck, Lean percentage of CVD was the highest, and then was mule duck and MD. The subcutaneous percentage of CVD and MD was significantly higher than that of mule duck. The abdominal fat percentage of MD was significantly higher than that of CVD and mule duck. The breast muscle protein percentage of mule duck was significantly higher than that of MD and CVD. The breast muscle fat percentage of CVD was higher than that of MD and mule duck. The breast muscle water percentage of mule duck was significantly lower than that of MD and CVD. The breast muscle shear value of MD was significantly higher than that of CVD and mule duck.
