摘　　要：介绍了果蔬差压式预冷设备的原理、组成、分类及影响因素,综述了差压式预冷设备的发展概况、存在的问题及发展趋势,提出了差压式预冷设备使用和推广建议。The basic principles, the constitutes,the sort and the affecting factors on fruit and vegetable forced-air pre-cooling equipment were introduced in this paper. Research status, current problems and developing trends of fruit and vegetable forced-air pre-cooling equipment were discussed and analyzed. According to current problems, the suggestions for using and popularizing forced-air pre-cooling equipment were put forward.
