摘  要:采用烧碱水解大豆蛋白/聚乙烯醇共混纤维(简称大豆纤维)中的大豆蛋白,通过含氮量分析、红外光谱、扫描电镜,研究了碱处理纤维的化学组成、大豆蛋白含量、官能团、结晶结构和形态结构。研究结果表明,大豆纤维中存在易水解和较难水解两类大豆蛋白;大豆蛋白和聚乙烯醇的相容性较差,呈相分离状,且大豆蛋白以团块状分散于连续相的聚乙烯醇组分中;大豆蛋白含量与烧碱处理纤维的失重率之间,以及红外光谱中大豆蛋白酰胺Ⅰ、酰胺Ⅱ与849cm-1处聚乙烯醇骨架的特征吸收峰的吸收强度比之间,均存在良好的线性关系,这些关系可应用于大豆蛋白含量的检测和分析。Hydrolysis of soybean protein in soybean protein/polwinyl alcohol blended fibers was carried out with caustic soda solution. The chemical composition, soybean protein content, functional groups, crystalline and morphological structure of partly and completely hydrolyzed fibers were investigated using elemental analysis, infrared spectrum and scanning electron microscope. The results showed that the fibers contained two kinds of soybean protein, viz. easily hydrolyzed and difficultly hydrolyzed. It was found that the compatibility of soybean protein and polyvinyl alcohol was poor, and they exhibited phase separation structure, and the blocky soybean protein was dispersed in the continuous phase of polyvinyl alcohol. The content of soybean protein remained in the fibers subjected to caustic treatment had good linear relationships with the weight loss of fibers and the absorbance ratios of the amide Ⅰ and amide Ⅱ peak of soybean protein to the peak at 849cm^-1, which could be applied to analyze the soybean protein.
