摘 要:试验以海棠砧新红星苹果叶片和果实为试材,研究了叶片和果实发育过程中淀粉、山梨醇、蔗糖、葡萄糖和果糖含量及果实中淀粉酶和转化酶活性的动态变化。结果表明,苹果叶片和叶柄中的碳水化合物以山梨醇为主,但在果实中山梨醇含量却很少,而果糖、蔗糖和葡萄糖的含量较高。这种比例的变化可能发生在果实内部。果实在幼果期很少积累淀粉,进入速长期以后,果内淀粉才不断积累,在果实接近成熟期,淀粉的含量又急剧下降,而果糖和蔗糖含量急剧增加。By analyzing the changes in the content of starch, sorbitol, sucrose glucose and fructose and the activities of related enzymes, the dynamic patterns influenced by seasons and physiological situation was studied with the materials of 1to 2yearold potted seedlings and 5yearold young bearing trees of Starkrimson(Malus domestica cv. Starkrimson). The main results were that the content of sorbitol was far higher than that of other soluble carbohydrates both in leaf and in peduncle. While in fruit, the content of fructose holds in peak, the next was sucrose and glucose, whlie the content of sorbitol was the lowest and changes a little in different seasons. The composition of soluble carbohydrates changes in peduncle and fruit may due to the fact that the sorbitol was transported into the fruit, it was converted readily to other carbohydrates. The content of starch was lesse in the young fruit at the first growth stage, but gradually increased from flush growth period and dropped rapidly as the content of fructose and sucrose sharply increased attending harvest period.
