焦糖香精的毒性及安全性评价

摘　　要：[目的]研究焦糖香精毒性和安全性。[方法]按《食品安全毒理学评价程序和方法》进行。[结果]焦糖香精对小鼠急性毒性实验LD50=6810mg/Kg.bw,属实际无毒级;蓄积毒性试验、骨髓微核、Ames试验、精子畸形试验、骨髓染色体畸变试验、睾丸染色体畸变试验、30d喂养试验对动物体重、血液常规及血清CH、BUN、Glu均无明显毒性作用(P﹥0.05)。[结论]综上结果可初步断定焦糖香精是一种安全、无毒的食品添加剂,可安全用于各类食品及饮料中。[Objective] To study general toxicity and security of caramel aromatic essence. [Methods] According to the of China standards “Procedures and Methods for Toxicological Assessment on Food Safety” the evaluation People＇s Republic “ on toxicity and security of caramel aromatic essence was carried out. [ Results] The LD50 of caramel aromatic essence was 6 810 mg/kg.bw （oral to NIH mice） . which behmgs to non-toxic degree. In accumulative toxicity test, Micronucleus test, Ames, test, the test of sperm shape abnormality, chromosome aberration test of bone marrow cell, chromosome aberration test of testis, 30 days feeding test, there were no dr：lraatically changes between the experimental groups and the control group for body weight, blood routine examination, the respective level of CH. Bun and Glu in serum （P 〉 0.05） [ Conclusions] Caramel aromatic essence is a kind of safe, non-toxic additive for foods, which could be used in kinds of food and beverage.
