东盟桥头堡地域文化架构中的昆明餐饮业思考

摘  要:云南自古以来就是中国与东南亚地区文化交流的通道,这一历史已经有两千年以上的文字记录。经济互补,文化互通,是中国与东盟生存与发展的内在需求。20世纪90年代以后,中国政府加大了与东盟交流合作的步伐,作为拥有桥头堡地缘优势的云南,机遇与前途大可期待。饮食文化就是云南能够和应当发挥重大作用的领域。云南饮食文化的资源、历史、民族、地缘优势是独特的,而云南饮食文化的时代发展更是得天独厚和责无旁贷的。突出特点、发挥优势、外传内引,应当是云南发展本地饮食文化的12字方针。本文粗略分析了东盟地区的饮食文化特征,初步比较了云南与东盟饮食文化的异同,讨论了云南与东盟饮食文化互补的可能与潜力,展望了云南在中国与东盟区域文化交流中的纽带作用发挥的空间与前景,认为昆明餐饮业的东盟桥头堡地位与意义是具有极大空间与潜力的。Yunnan is the exchange passage of China and the area of Southeast Asian from of old. This history has been recorded beyond two thousand years. Complementary economy and culture are the immanent needs of survival and development of China and ASEAN. China has increase the exchange and cooperative steps with ASEAN since 1990s. Yunnan has regional advantage as the bridgehead of ASEAN and the opportunities and future are expectant. The dietary culture is the field that Yunnan can and should play important role in. Yunnang dietary culture has the particular advantage of resource, history, nationality and region and the age development of Yunnang dietary culture is more advantaged and the responsibility is no shirking. Standing out characteristic, developing advantage, spreading abroad and introducing into are the guideline that Yunnan should use to develop its dietary culture. This article superficially analyses the characters of dietary culture of ASEAN, initially compares the simi- larities and differences of dietary culture between China and ASEAN, discusses the possibility and potential that Yunnan can cooperate with ASEAN in the field of dietary culture and looks into the future.
