摘  要:概述胡椒的用途及胡椒产品的开发现状,提出我国胡椒产品的开发建议。The production of pepper has developed rapidly in recent 10 years in China, and how to develop the additional value of pepper products should be considered by specialists in the field. This paper briefly introduces the utility of pepper and the current situation of foreign and domestic pepper development. The paper also suggests that the sustainable development of pepper production should be based on the improvement of the processing technique and the quality of pepper, and that importance should be attached to pepper food ingredients and to the medical application of pepper.
