摘  要:以贮藏性较好的花盖梨和贮藏性较差的尖把酸梨为试材,研究其果皮表面结构和细胞壁组分变化与果实耐贮性的关系。结果表明:(1)花盖梨果皮存在大量细小裂纹;尖把酸梨果皮存在大量瘤状物,裂纹少但有大量破损面,破损面处胞间连接已完全破坏并出现空洞。(2)尖把酸梨腐烂率极高,果实硬度下降快,乙烯释放高峰时间早且峰值高,细胞壁中纤维素含量低且下降速度快,原果胶含量低而水解速度快,果实品质的劣变较快。Jianbasuan and Huagai pears were used as materials to study the relationship between the changes of pericarp structure and cell wall components and their storage characters. The results show that: ( 1 ) A large amount of small crackles on the pericarp of Huagai pear was observed. There were a lot of tumor like objects and little cracks on the surface of Jianbasuan pear. Many damaged of Jianbasuan pear, and they could connected with each other, and intercellular areas appeared on the surface junctions of the middle part of pericarp of Jianbasuan pear broke completely and holes appeared on the damaged areas. (2) Compared with Huagai pear, the content of cellulose, proto pectin and fruit firmness of Jianbasuan being poor storability were lower, while decay rate, water-soluble pectin and ethylene production were higher.
