摘　　要：天然食用色素中具有醌类结构的不多,常用的主要有茜草色素、紫草色素、牛舌草色素、酸枣色素、紫胶色素、胭脂虫红色素等,概述了这几种醌类色素的特性,综述了近几年醌类色素的提取和精制方法的研究进展。Natural pigments have a few categories of quinone structure, which commonly include rubianic acid, gromwell pigment, alkanet color, jujube pigment, lac dye, carmine, et al. In this paper, characteristics of these quinone pigments are outlined, and progress of research on extraction and purification method of these pigments in recent years are overviewed.
