摘  要:通过对陕西省延安和杨凌两地春季蔬菜进行对比试验,分析了不同地区及栽培方式下的蔬菜pH值、维生素C含量、可溶性糖含量和硝酸盐含量等的差异。结果表明,陕西延安春季蔬菜的可溶性糖含量和维生素C含量较杨凌的高;杨凌露地蔬菜的硝酸盐污染指数为轻度,延安露地蔬菜除绿叶菜类为硝酸盐中度污染外,其余菜类为轻度污染。从营养品质和安全品质分析,延安蔬菜的品质优于杨凌蔬菜的品质。延安露地蔬菜的可溶性糖含量和维生素C含量都较拱棚和日光温室的高。除拱棚葱蒜类受到硝酸盐中度污染外,其他菜类为轻度污染;露地和拱棚中的蔬菜受到硝酸盐的轻度污染。从营养品质和安全品质上比较,露地蔬菜的品质比拱棚和日光温室的蔬菜品质要好。According to the experiment on spring vegetable in YanPan and Yangling Shaanxi province this paper analyzed the variability of vegetable quality including pH, vitamin c (vC) content soluble sugar and nitrate content under different region and cultivating model. The results showed that the content of vC and soluble sugar in YanPan, Shaanxi was higher than those in Yangling. The vegetable plant under open field condition in Yangling was light-polluted by nitrate, but in Yan'an only green leaf vegetable in open field was middling -polluted by nitrate, the other vegetable species were light- polluted by nitrate. Compared from nutrition and safety quality, vegetable quality in Yan'an were better than those in Yangling. In Yan'an, the vegetable content of soluble sugar and vC under open field condition were higher than those under shield trellises and sunlight greenhouse condition. Under shield trellises condition, only shallot garlic vegetable was middling -polluted by nitrate, the other vegetable species were light-polluted. The vegetable under open field and shield trellises condition were light-polluted. Compared from nutrition and safety quality, quality of open field vegetable were better than those under shield trellises and sunlight greenhouse condition.
