摘  要:[目的]对糖果中存在的甲醛含量对人体可能产生的暴露量进行危险性评估。[方法]根据人群每人每日甲醛平均摄入量与95%可信摄入量进行非致癌毒性、致癌毒性评估。[结果]人群甲醛的平均摄入量和95%可信摄入量均远低于每日允许摄人量(ADI值),甲醛诱发动物肿瘤剂量分别为平均摄入量和摄入量95%可信限的70万~350万倍和5.4万~74万倍。[结论]国内生产的糖果中天然甲醛含量与纯进口糖果没有显著性差异;由于实际在糖果中甲醛的检出量通常较低,因此对人类健康造成危害的可能性很小,目前国内市场流通的糖果是安全的。虽然没有明确证据证明通过进食而摄入的甲醛会令人患癌,基于甲醛是一种潜在致癌物,因此在食品中应禁止非法添加。This is to make risk assessment on formaldehyde in candy. The average intake and its 95% confidence limit were used for carcinogenic and non-carcinogenic assessment. The average intake and its 95% confidence limit were far below acceptable daily intake (ADI), and the dose inducing animal tumor is 3500000-700000 times to average intake and 740000-54000 times to its 95% confidence limit. The candy in current market is basically safe. Formaldehyde exists widely in the environment, so the minor formaldehyde from candy will not cause acute effect. Because the main health concern of formaldehyde is its cancer causing potential, formaldehyde is forbidden for food use in either place.
