摘　　要：后基因组时代的主要研究任务之一即是蛋白组研究,蛋白质组学技术发展迅速,目前已有望成为用来解决生命科学领域中诸多问题包括肉品质问题的有力工具,文章介绍了蛋白质组学技术在肉品质研究中的进展及应用前景。Proteomic study is one of main research task in the post-genomic era. With the rapid progress of proteomic technology, it is now often cited as promising tool which could resolve numerous problems in the field of life science： one of these could be meat quality. The article gives an introduction about the application and prospect of proteomic technology in meat quality research.
