摘  要:挥发酚是重要的环境污染物,食用被挥发酚污染的鱼损害人体健康,因此鱼体中挥发酚残留量的准确分析方法研究非常重要。本文比较了两种蒸馏方法提取鱼体中挥发酚的效果,研究了鱼体中挥发酚残留量的测定方法。结果表明,水蒸汽蒸馏提取法效果好,4-AAP法适用于处理后样品的分析测定。本研究建立的方法,线性范围0.005~6.0mg·L-1,回收率85.5%~105%,相对标准偏差1.6%~6.3%,检出限0.05mg·kg-1。方法实用,便于操作,已应用于鱼体中挥发酚残留量的测定。The volatile phenols are important environment pollutants. The analysis method of volatile phenols residue in fish is very important since eating polluted fish harms to the health of people. The effect of two distillation methods in extracting the volatile phenols residue in fish was compared, and the determination method of volatile phenols residue in fish was studied. The results showed that the steam distillation extraction method was more effective, and 4-aminoantipyrine (4-AAP) method was suitable for the analysis and determination of samples after treated. The linear range of the method was 0.005~6.0 mg·L^-1, with relative standard deviations 1.6%~6.3%, the recovery 85.5%~105% and detection limit of 0.05 mg·kg^-1. The method is practical and simple and has been applied successfully to the determination of volatile phenols in fish.
