摘  要:本文旨在研究二氢杨梅素(DMY)对肉鸡抗氧化酶及胸肌品质的影响。采用单因子完全随机设计,将144只28日龄的AA肉用公鸡分为4个处理组,每个处理组6个重复,每个重复6只鸡。分别饲喂含0、100、200、400mg/kgDMY的4种日粮,饲养于7月中旬高温季节,试验持续3周,试验期间日平均温度26.5℃。研究发现,二氢杨梅素对肉鸡血清、肝脏中的超氧化物歧化酶(SOD)、过氧化氢酶(CAT)无显著影响(P>0.05),但显著降低血清肌酸激酶(CK)的活性及血清和肝脏中丙二醛(MDA)的含量(P<0.05),同时显著降低肉鸡胸肌的滴水损失和剪切力值(P<0.05),对肉色L*值、a*值、b*值和pH的影响未达到显著水平。表明二氢杨梅素对肉鸡体内的抗氧化酶无影响,可能通过直接清除自由基,降低体内的脂质过氧化物含量,减少细胞内特征酶的流失,这种作用可能与二氢杨梅素改善胸肌滴水损失和嫩度有关。The study was conducted to study the effects of dihydromyricetin (DMY) on antioxidant enzyme and breast meat quality of broilers. One hundred and forty four 28-day-old AA made broilers were randomly allocated to four treatments with six replicates each and six broilers in each replicate, and respectively fed with 0, 100, 200, 400 mg/kg DMY. The trial started at Late-July and lasted for three weeks with an average temperature of 26.5℃. The results showed that the supplement of DMY had no significant effect on the activities of SOD and CAT enzyme in serum and liver of broiler (P〉0.05), but significantly decreased the serum CK enzyme activity and the MDA content in serum and liver (P〈0.05). At the same time, it significantly decreased drip loss and shear force of broiler breast muscle (P〈0.05), but had no significant effect on meat color L^*, a^* , b^* and pH value (P〉0.05). These results indicated that DMY could not affect the antioxidant enzymes. It might reduce lipid peroxidation and loss of feature enzyemes by clearing free radicals directly, which might be associated with improving the drip loss and tenderness of breast muscle.
