瘦肉型猪新品系(DI、SJ)的氟烷敏感性及其与肉质的关系

摘  要:对瘦肉型猪新品系DI和SJ系301头仔猪进行氟烷测验,测出4头氟烷阳性猪,阳性率为1.33%,且DI和SJ两品系间及不同性别间无显著差异。随机抽取氟烷阴性猪34头进行基因型检测,其中6头为杂合子(Nn),从而推算出群体中NN、Nn和nn3种基因型频率分别为81.26%、17.41%和1.33%,N和n的基因频率分别为89.97%和10.03%。对不同表型和基因型猪的肉质进行评定,结果显示:4头氟烷阳性猪(nn)肉质最差,其中3头出现严重PSE肌肉,另一头有轻度PSE肌肉,其肉色、大理石纹、保水性、pH值等肉质指标均显著低于氟烷阴性猪NN和Nn(P<0.05);而氟烷阴性猪(6头NN,4头Nn)没有1头出现PSE肌肉,且Nn的各项指标均介于NN和nn之间。Halothane tests of piglets of DI(144) and SJ(157) lines showed that 4 of 301 piglets(133%)were halothane positive.There was no significant difference between the two lines and between sexes.34 halothane negative piglets were randomly sampled and tested for genotype,6 being heterozygous(Nn)The genotype frequencies of NN,Nn and nn were 8126%, 1741% and 133%,respectively.The gene frequencies of N and n were 89.97% and 1003%,respectively.14 pigs(6NN,4Nn,4nn)were slaughtered to study the relationship between phenotype or genotype and meat quality.The results showed that:the meat color grade,water holding capacity,marbling grade and pH value of nn pigs were all significantly lower than those of NN and Nn ones,and the values of Nn pigs were all between the values of NN and nn pigs.4 nn pigs all demonstrated PSE muscle,while no PSE muscle was discovered in NN and Nn pigs.
