摘　　要：两性淀粉作为一种重要的变性淀粉新品种,拥有良好的使用性能和广阔的应用前景。作者详述了两性淀粉的制备原理、合成法分类及其在造纸、水处理、化妆品等领域的应用现状和现阶段存在的问题,并对其未来的发展方向进行了展望。Amphoteric starch is an important modified starch with excellent functional performance and a broad application future. In this paper, the principle of the preparation, synthetic methods and applications in the field of papermaking, water treatment, cosmetic, etc, were introduced in detail. Furthermore,the problems existing at present and the future development of amphoteric starch were also discussed.
