摘  要:高压电场干燥技术以其低投入、低能耗、不升温等优点为热敏性物料干燥开辟了一条新途径,但其干燥机理、干燥模型和各种因素对干燥效果影响的研究还不够深入和完善。为了提高高压电场干燥效率,进一步开展相关的研究工作,利用综合法、分析法归纳和总结了高压电场干燥技术的机理;介绍了高压电场干燥的两种装置及其特点;总结了高压电场干燥技术的特点及其在蔬菜、中药材、生物制品等热敏性物料干燥方面应用情况。研究结果表明:高压电场干燥技术在热敏性物料干燥领域具有明显的优势,并指出了如何进一步降低能耗、提高效率和将其与其它干燥技术相结合是今后研究工作的热点。High voltage electric field drying technology, as a novel method of non-thermal processing, is particularly for heat sensitivity materials for its many advantages such as saving energy, low equipment expenses, low drying temperature and superior materials quality. In order to improve the drying technique and the drying efficiency of the high voltage electric field, as well as acquire a more full acquaintance about application of high voltage electric field drying to heat sensitivity materials, the literatures about application of high voltage electric field to drying heat sensitivity materials were summarized systemically. The paper reviewed the mechanism of high electric field drying. Then the paper introduced the development and virtues and disadvantages of two kinds of driers. The research progress of high voltage electric field drying heat sensitivity materials such as traditional Chinese medicine, vegetable and biomaterials crop seed abroad and in domestic is reviewed. Methods: analyze and synthesize, the result show that given their simpler design and lesser energy consumption, high voltage electric field drying systems has distinct advantage in the field of the drying of heat sensitive materials, in addition, several points such as how to reduce energy consumption and promote efficiency, how to perfect electrode shape, how to establish the model of drying and how to associate it with other drying techniques are presented for the hot point of future research in this article.
