摘 要:对中国7个地方品种鸡(含2个杂种)84日龄胸肌水分、粗蛋白、粗脂肪、灰分、钙、磷含量进行了研究分析。结果表明,胸肌中各常量化学成分含量范围为:水分73.00%~73.91%,蛋白质24.19%~25.20%,脂肪0.257%~0.547%,灰分1.131%~1.181%,磷2329~2447mg/kg,钙111.2~129.5mg/kg。除肌间脂肪外,胸肌中各常量化学成分含量在部分品种间存在差异,就其常量养分营养价值,5个地方鸡品种顺序为乌骨鸡>肖山鸡>狼山鸡>油鸡>白耳鸡;肌肉的多汁性、风味和嫩度,其顺序为乌骨鸡>油鸡>白耳鸡>肖山鸡>狼山鸡。性别仅对84日龄肌肉水分有明显影响,对其他常量化学成分影响不大。By analysis and comparison on moisture, crude protein (C P), crude fat (C fat), crude ash (C ash), calcium (Ca) and phosphorus (P) concentration of breast muscle in seven Chinese native chicken breeds, the results showed: ① chemical macro composition contents of breast muscle in the Chinese native chicken breeds were moisture 73 00% ~ 73 91%, C P 24 19% ̄25 20%, C fat 0 257% ̄0 547%, C ash 1 131% ̄1 181%, Ca 111 2 ̄ 129 5 mg/kg and P 2329 ̄2447mg/kg; ②there are significantly difference in analysis items among those breeds, except for crude fat; ③the order of nutritive value of muscle is Silkies>Xiaoshan chickens>Langshan chickens>Beijing fatty chickens>White earlobes chickens; the order of succulence, special flavour, tenderness of muscle is Silkies>Beijing fatty chickens>White earlobes chickens>Xiaoshan chickens>Langshan chickens; In addition, there is significantly effect on moisture between male and female in 84 daylys
