摘 要:研究测定鲁烟白猪与杜洛克、大约克杂交商品猪的生长肥育性能、胴体品质和肉质特性。结果表明:生长性能以杜洛克×鲁烟白猪组合较高,与大约克×鲁烟白猪组合相比,平均日增重提高13.24%(P<0.05),料重比降低6.71%。2个组合的肥育猪胴体性能和肉质性状差异不明显。其中,杜×鲁烟组合的胴体直长、眼肌面积、瘦肉率、肉色、大理石纹评分和肌内脂肪较高,分别比大×鲁烟组合提高1.81%、15%、1.07%、6.85%、18.46%和178.57%;背膘厚较薄、失水率和滴水损失较低,分别比大×鲁烟降低14.35%、70.51%和63.70%。背最长肌17种氨基酸含量组合间差异不显著。氨基酸总量、鲜味氨基酸含量、必需氨基酸含量和必需氨基酸占总氨基酸的比例都以大×鲁烟较高,分别比杜×鲁烟组合提高10.03%、9.89%、21.48%和9.38%。4种脂肪酸含量组合间差异显著。其中,棕榈酸、硬脂酸和油酸含量都以杜×鲁烟组合较高,分别比大×鲁烟组提高8.90%(P>0.05)、8.37%(P>0.05)和18.64%(P<0.05);亚油酸以大×鲁烟较高为15.05%,比杜×鲁烟组合提高88.125%(P>0.05)。The growth performance, carcass performance and meat qualities of different hybrid combination commercial pigs were studied. The results showed that the growth performance of Duroc x LUYAN white pig was higher, ADG and FCR increased by 13.24% ( P 〈 0. 05 ) and 6.71% respectively, as compared with Yorkshire × LUYAN white pig. The carcass performance and meat qualities of the two hybrid combination commercial pigs had no significant difference. Carcass length, eye muscle area, lean percent, meat color score, marbling score and intramuscular fat of Duroc x LUYAN white pig were higher, increased by 1. 81%, 15%, 1. 07% ,6.85% , 18.46% and 178.57% respectively; fatback, water loss rate and drip loss reduced by 14. 35% ,70.51% and 63.70% respectively as compared with Yorkshire × LUYAN white pig. The contents of 17 amino acids of the two hybrid combinations had no significant difference. TAA, DAA, EAA and EAA/TAA of Yorkshire x LUYAN white pig were higher, increased by 10.03% ,9.89% ,21.48% and 9.38% respectively, as compared with Duroc × LUYAN white pig. Longissimus muscle fatty acid contents had significant difference. Palmitic acid, stearic acid and oleic acid of Duroc × LUYAN white pig were higher, increased by 8. 90% ( P 〉 0.05 ) ,8.37% ( P 〉 0.05 ) and 18.64% respectively ( P 〈 0.05 ) respectively. The content of linoleic acid of Yorkshire x LUYAN white pig was 15.05% ,increased by 88. 125% (P 〉0.05) as compared with Duroc × LUYAN white pig.
