摘　　要：为了提高某食品焙烤生产线的生产效率,以西门子的上位机WinCC6.0组态软件和下位机S7-300系列PLC为核心设计了其监控系统,两者通过TCP/IP协议通讯。上位机采用VB脚本和C脚本相结合实现监控画面的动态处理、原料信息管理、参数及配方管理、报表生成、权限管理及故障信息处理等;下位机PLC与现场的设备通过Profibus-DP构成控制网络,实时对系统设备进行控制。现场运行结果表明,所设计的系统运行稳定、可靠,设计方案对食品行业的焙烤生产线平台的组态和控制具有一定的参考价值。To raise the productivity of a food backing industry, the supervision and control system is developed based on Siemens WinCC6.0 software and S7-300 series PLC. Communications between WinCC6.0 and PLC are designed with TCP/IP protocol. Using VB script with ANSI C script together, the dynamic process of pictures, the management of recipe raw material informations and parameters, the making spreadsheet, the setting user rights, and the treatment of fault information are implemented. PLC communicates with field devices by Profibus-DP to real time control devices. Application results show that the designed supervision and control system runs steadily and reliabily. This solution plays a certain reference role in the configmation and control for food backing system.
