柠檬酸对小麦多酚氧化酶活性的影响

摘　　要：选用108份小麦品种为试材，分别检测了0．1、0．2．0．4、0．6、0．8mmol／L等浓度柠檬酸对其籽粒多酚氧化酶活性的影响，结果表明：在0．1～0．4mmol／L浓度范围内，柠檬酸对小麦多酚氧化酶活性起激活作用，在0．6—0．8mmol／L浓度范围内，柠檬酸对小麦多酚氧化酶活性起抑制作用。108 wheat cultivars were selected as materials and the effects of citric acid with different concentrations of 0.1, 0.2, 0.4, 0.6 and 0.8 mmol/L on activities of polyphenol oxidase （PPO） were measured. The results indicated that the citric acid could activate the activity of wheat PPO in a concentration range of 0.1 - 0.4 mmol/L and inhibit the activity of wheat PPO in a concentration range of 0.6 - 0.8 mmol/L.
