Intramuscular fat content is generally associated with sensory quality and acceptability of fresh pork. This study was conducted with the RT-PCR method to determine effects of nutrition levels (nutrient density) on heart fatty acid-binding protein(H-FA BP) gene expression and fatty metabolism in muscle in DLY (Duroc xLandrance xYorkshire) pigs. A total of 24 DLY pigs with BW (64.24±2.66) kg were fed two diets of either high (DE= 13.81MJ/kg, CP= 14.19%) or low (DE=12.55 MJ/kg, CP= 11.08%)nutrition level. Six pigs were slaughtered in each group when pigs weighed 100 kg. The results indicated that the ADG was increased (P 〉 0.05)and F/G was reduced (P 〈 0.01) for pigs fed high nutrient level. H-FABP gene expression and intramuscular fat content in skeletal muscle were increased by 26.18% (P = 0.288 ) and 37.28%(P = 0.09), and meat tenderness was increased by 15.05%(P = 0.026)and fatty metabolic enzymes MDH and LPL in muscle were increased by 11.90%(P= 0.288 )and 11.77%, and FFA in blood plasm was reduced (P 〉 0.05 ) for pigs fed diet of low nutrition level compared to pigs fed diet of high level. It is concluded that H-FABP gene expression and fatty metabolism in muscle are affected by dietary nutritional level.
