摘  要:为确定从侧柏叶中提取的黄酮类化合物的稳定性,对侧柏叶黄酮类化合物在光、热、pH值、金属离子等因素方面的稳定性进行了测定。结果表明:侧柏叶黄酮类化合物在pH值为5-6的条件下稳定;碳水化合物对化合物无明显影响;紫外灯照射会使侧柏叶黄酮类化合物颜色加深;金属离子K^+,Na^+,Mg^2+基本上不影响侧柏叶黄酮类化合物的稳定性,而Ca^2+,Al^3+,Fe^3+对其有破坏作用;体积分数为0.01的H2O2和Na2SO3对侧柏叶黄酮类化合物稳定性均有负面影响。The stability of flavonoids from Platycladus orientalis leaves was studied in different conditions. The results showed that the stability of flavonoids was better when 5 ≤pH≤6 and carbohydrates have little effect on it. The color became deeper when flavonoids were exposed in the ultraviolet lights. K^+ , Na^+ , Mg^2+ had no effect on the flavonoids, while Ca^2+ , Al^3+, Fe^3+ had remarkable negative effect on it. Volume fraction of 0.01 H2O2 and Na2SO3 also had negative impact on the stability of flavonoids.
