摘  要:通过对不同淮山药品种(种质)的营养成分进行测定,并对结果进行相关与聚类分析,结果表明,蛋白质含量最高的是桂淮5号和GY 2,分别为3.03%和2.69%;淀粉和总氨基酸含量最高的是GY 2和GY 62,分别为29.76%、1.95%和27.9%、1.88%;总皂甙含量最高的是GY 2和GY 47,铁、锌、铜含量最高的是GY 2。因此,GY 2的综合营养品质较好。相关分析结果显示,不同营养品质成分之间具有相互促进关系:淀粉与总皂甙含量呈极显著正相关,脂肪与锌含量呈极显著正相关,可溶性总糖与锌、铁、铜含量均呈极显著正相关。通过聚类分析,可将不同淮山药品种(种质)分为总皂甙含量较高型、铁含量较高型、淀粉含量较高型、蛋白质氨基酸含量较高型等4大类,营养品质差异也可作为淮山药种质分类的依据之一。In this experiment, the nutritional components of different yam varieties (germplasm) were determined, the correlation and cluster analysis were done. The results showed that the protein content of Guihuai 5 and GY2 were the highest, which was 3.03% and 2.69%, respectively; the starch and total amino acid contents of GY2 and GY62 were the highest, which were 29.76%, 1.95% and 27.9%, 1.88%, respectively. Moreover, the saponin contents of GY2 and GY47 were the highest, and the iron, zinc, and copper contents of GY2 were the highest. Therefore, the comprehensive nutritional quality of GY2 was better. Correlation analysis showed that between starch and saponins, fat and zinc contents, total soluble sugar and Fe, Zn, Cu had a very significant positive correlation. It indicated that there were mutual promotion relationships between different nutritional components. By cluster analysis, different yam varieties (germplasm) resources were divided into four major categories, such as higher saponin type, high-iron type, higher starch type, higher protein and amino acid type. Therefore, the difference of nutritional quality could be used as one of category bases for yam germplasm.
