摘  要:以水为溶剂从栗壳中提取得到栗壳提取物CSE.以猪油和芝麻油作为底物,采用烘箱贮藏法测定油脂的POV值,研究CSE对油脂的抗氧化活性.以Fenton反应为产生.OH模型、邻苯三酚自氧化反应为产生O2-.模型,用紫外和可见分光光度法试验了CSE对模型中产生的.OH和O2-.的清除作用.结果表明:CSE具有一定的抗油脂氧化能力;CSE具有良好的清除.OH作用,且清除作用与浓度呈正相关性,EC50为80.3 mg.L-1;CSE对O2-.没有显著的清除作用.The shell of Castanea Mollissima B1. was extracted with water and extracts noted as CSE were obtained. The antioxidative activity of CSE was measured by oven experiments using lard and sesame oil as substrates. The scavenging effects on hydroxyl radicals and superoxide anion radicals of CSE were studied by UV- Visible spectroscopy. The hydroxyl radicals and superoxide anion radicals are produced respectively by Fenton reaction and pyrogallol autoxidation system. The results showed that CSE possesses antioxidative activity in lipid and had the scavenging activity to hydroxyl radicals, in a concentration - dependent manner. The scavenging capacity to hydroxyl radicals was represented by the concentration scavenging 50% of all of radicals, which of CSE was 80.3 mg/L. CSE had no remarkable scavenging activity to superoxide anion radicals.
