摘 要:目的探讨造成桶装水微生物指标不稳定的各种影响因素,并提出相应控制措施。方法选取10家近期质量抽检不合格的生产企业,通过对生产过程及产品的调查、取样分析与研究,查找其微生物指标不稳定的影响因素。结果造成桶装水微生物指标不稳定的影响因素主要有:桶、盖消毒不合格;灌装间空气消毒不合格;桶盖密封不合格;水体消毒不合格及从业人员操作不合格。根据不同企业存在的实际问题分别进行改进和控制后,使其合格率由原来的20%提高到98%。结论控制好桶装水生产的各个消毒环节,完善生产方法标准,可以有效控制桶装水的微生物指标。Objective To find out the factors to effect microorganism parameters of bottled water, aad bring forward the measures to control the problem. Methods Ten manufacturing enterprises which produce an unqualified bottled water has investigated, including their manufacturing processes and product sample analysis, to analyze the factors to effect unstable microorganism parameters. Results The main factors to lead to unstable microorganism parameters of bottled water included unqualified disinfection of bottle, bottle cap, bottling room and purified water, disqualification of the cap sealing and the employed operation. After the improvement and quality control according to their own practical problems of these manufacturing enterprises, the up - to - standard rate of the microorganism parameters of bottled water has increased from 20% to 98%. Conclusion A qualified disinfection of each manufacturing process, with combination of the standard establishment of operation methods for. bottled water manufacturing can effectively control microorganism parameters of bottled water.
