摘 要:采用AS1.398酶水解明胶不同时间,获得不同相对分子质量分布的水解蛋白质,然后通过酰化反应合成相应的水解蛋白质型表面活性剂。应用聚丙烯酰胺凝胶电泳(SDS-PAGE)分析测试技术对水解蛋白质的相对分子质量分布进行了分析,并且对表面活性剂的氨基取代度、起泡力、乳化力、表面张力进行了测试。结果表明高相对分子质量分布的表面活性剂的起泡力和乳化力较强,而低相对分子质量分布的表面活性剂降低溶液表面张力的能力较强,不同相对分子质量分布的表面活性剂具有不同性质的表面活性;可通过控制水解蛋白质的相对分子质量分布,获得不同用途的水解蛋白质型表面活性剂。Gelatin was hydrolysed by enzyme AS1.398 under different time in order to attain collagen hydrolysate of different molecular weight distribution. The molecular weight distribution of the hydrolysate was analysed by polyacrylamide gel electrophoresis(SDS-PAGE).Then corresponding collagen hydrolysate surfactants were synthesized with hydrolysate and oil-chloride. The amino substitution degree, foaming power, emulsifying power and surface tension of the surfactants were tested. The results suggest that the surfactant synthesized with hydrolysate of higher molecular weight has stronger foaming and emulsifying power, and that the surfactant synthesized with hydrolysate of lower molecular weight could reduce the so- lution surface tension lower, which indicated that surfactants with different hydrolysate molecular weight distribution have different surfactivities; so the collagen hydrolysate surfactants with different use mav be attained by controlling the molecular weight distribution of the hydrolysate.
