摘　　要：苦瓜富含多种活性成分,如植物胰岛素、苦瓜素、多肽、糖类和氨基酸等,具有降血糖、抗病毒、抗肿瘤、抗生育、抗氧化和抑菌等功能。综述了苦瓜的化学成分和保健功能及其在食品、医学领域的应用进展,并展望了其研究和应用前景。Momordica charantia L. is rich in many active components, including plant insulin, MCE, polypeptide, carbohydrate and amino acid, which have many functions, such as reducing blood sugar, anti-virus, anti-tumor, anti-fertility, anti-oxidation and bacterial inhibition. The application progress of chemical constituents, health function of Momordica charantia L. and its application on food and medical fields are summarized. The prospects Of researches and application are forecasted.
