摘 要:目的探讨农村居民膳食营养状况及存在的营养问题。方法采用食物频率问卷方法进行调查。摄入食物中营养素含量的计算参照中国疾病预防与控制中心营养与食品卫生研究所的《食物成分表》。结果平均每人每日摄食物为1482~1492g,其中蔬菜、水果摄取食量超过中国居民膳食指南建议数值,鱼、肉及奶制品摄入偏低;女性在营养摄入量方面低于男性。结论农村居民热能、蛋白质摄入量基本满足要求,但总体营养水平偏低,食物摄入不平衡使营养过剩和营养不良并存。Objective To explore the dietary structure and nutrition statue of the resident in rural area of Yunlong County and nutrition problem. Methods The food frequency questionnaire survey was made. The intake of nutrients was surveyed based on the Composition Table of Food by the nutrition and food hygiene institute of CDC (Chinese Centre for Disease Control and Prevention). Results The average daily intakes of food was about 1 482-1 492g for a person per day. The intakes of vegetables and fruit were above the recommendation of the dietary guideline. The intakes of fish, meat and milk were lower than the standard. The intake of nutrients in females was lower than it of maled. Conclusion The intake of heat energy and protein meet the standard, but the total nutrition level is a little lower. The problems of overnutrition and malnutrition are co-existed in Yunlong County.
