摘 要:研究了饲料组成不同时,牛不同组织中δ13C和δ15N值的变化规律。将9头12~14月龄的青年牛随机分为3组,分别饲喂C4植物含量为100%、50%、0%的饲料,132d后屠宰。利用同位素比率质谱仪测定了牛尾毛、脱脂牛肉、粗脂肪、各种饲料的δ13C和δ15N值。结果表明,饲喂同种饲料的牛个体间碳、氮同位素组成随着时间的延长差异减小;牛尾毛、脱脂肌肉、粗脂肪中的δ13C值呈极显著相关性(P<0.01),并均与C4植物含量呈极显著的相关性(P<0.01);牛组织中的δ15N值并未随饲料呈现规律性变化。用牛组织中的δ13C值可以预测饲料中C4植物所占的比例,牛尾毛、脱脂肌肉、粗脂肪均可作为牛肉溯源的材料。The variational regularities of the values of carbon(δ^13C) and nitrogen(δ^15N ) stable isotopes in different tissues of cattle with the feedstuff composition were studied. Nine young cattle about 12 to 14 months old were randomly divided into three groups and fed with feedstuffs containing 100% , 50% , 0% C4 plant, respectively and were then slaughtered after 132 days. The δ^13C and 815N values of cattle tail hair, defatted muscle, crude fat and various feedstuffs were determined by isotope ratio mass spectrometry. Results showed that the difference of δ^13C and δ^15N values in cattle fed with the same feedstuff decreased with the increase of time. The δ^13C values of cattle tail hair, defatted muscle and crude fat were significantly correlated with each other(P 〈 0.01 ) and were also significantly correlated with the content of C4 plant(P 〈0.01 ). The δ^15N values of cattle tissues did not exhibit variational regularity with the feedstuff composition. Thus the δ^13C values of different cattle tissues can be used to estimate the proportion of C4 plant in the feedstuffs, and the cattle hair, defatted muscle and crude fat can all be used as material for cattle traceability.
