摘 要:[目的]研究臭氧处理对红富士苹果冷藏效果的影响,为臭氧在红富士冷藏中的应用提供理论依据。[方法]贮藏中定期用7mg/m3的臭氧对放在0℃的红富士进行处理,测定几种生理及品质指标的变化。[结果]臭氧处理可抑制红富士苹果的呼吸强度、乙烯释放速率、MDA的累积和PPO的活性,延缓可溶性固形物的消耗,保持较高的POD活性,有加快Vc损失和失水的负作用,但对硬度和有机酸含量变化无明显影响;臭氧对贮藏病害有很好的控制作用。[结论]7 mg/m3的臭氧处理延缓冷藏红富士苹果的生理变化。[ Objective 3 This paper studied the effects of ozone treatment on apple ev. Fuji fruits to provide theoretical guidance for the use of ozofie on apple in storage. [ Method ] The apples were stored at 0 ℃ and treated with 7 mg/m^3 ozone at intervals, several physiological and qualitative indexes were measured during storage. [ Result ] The results showed that ozone treatment inhibited respiration rate, ethylene production rate, MDA level and poly-phenol oxidase activity, delayed the loss of soluble solid contents, retained higher activity of POD, accelerated the loss of Vc and water, but no significant differences were found in fruit firmness and contents of organic acid; it also had a good control of diseases in storage. [ Conclusion] 7 mg/m^3 ozone treatment delayed physiological changes of 'Fuji' apple in cool storage.
