摘  要:It has been reported for over two decades that a fixed amount of non-freezable water’ exists in each species of biomacromolecule, even when taken well below the ice homonucleation temperature of about 232 K, as demonstrated by a variety of measurements. For instance, the amount of non-freezable water, R<sub>nf</sub>, in lysozyme measured by various techniques is about 0.33±0.03 g(water)/g(protein).
