摘  要:[目的]为茭白的食疗作用提供参考依据。[方法]以茭白单季茭品种"蒋墅茭"和双季茭品种"葑红早"为试验材料,研究了有机肥和无机肥处理的不同规格茭白肉质茎对重金属离子Pb2+和Cd2+束缚能力的影响。[结果]随茭白肉质茎的膨大,2个茭白品种对Pb2+和Cd2+的最大束缚量和最小束缚浓度总体呈逐渐增加的趋势;不同肥料处理间以有机肥处理时茭白肉质茎对Pb2+和Cd2+的束缚能力明显强于无机肥处理;品种间存在差异,以葑红早对Pb2+和Cd2+的束缚能力同比强于蒋墅茭。[结论]茭白肉质茎对Pb2+和Cd2+具有较强的束缚能力,是一种优质蔬菜。[Objective] The study aimed to provide reference foundation for the dietotherapy of Zizania latifolia.[Method] Using a single-harvested cultivar "Jiangshujiao" and a double-harvested cultivar "Fenghongzao" of Zizania latifolia as tested materials,the effects of organic fertilizer and inorganic fertilizer on the binding capacity of different size of Z.latifolia fleshy stem to Cd2+ and Pb2+.[Result] With the expanding of Z.latifolia fleshy stem,the binding capacity of Z.latifolia fleshy stem to Cd2+ and Pb2+ increased.When organic fertilizer was used,the binding capacity to heavy metals was stronger than treated with inorganic fertilizer.There were differences between cultivars.The binding capacity to Cd2+ and Pb2+ of "Fenghongzao" was stronger than that of "Jiangshujiao".[Conclusion] It was considered that the fleshy stem of Zizania latifolia had a strong the binding capacity to heavy metal,and Z.latifolia was an excellent food of vegetable.
